Country captain chicken curry

Country captain chicken curry is like a slice of history served in a bowl. It was a popular chicken curry among Anglo Indian communities back then in Calcutta. It’s a chicken curry with few ingredients used.
In the 1800s, British trade ships in India were called “Country Ships” and their Captains were called ‘Country Captains’. And this dish was very popular on the captain's table. And they used country chicken that’s why the name Country captain chicken curry.

You can make this curry hot or mild as u like. You can adjust the number of chilies added. Crushing the green chilies makes the gravy hotter that adding chopped chilies.
I have used less chicken as I didn’t have much at home because it was lockdown in India due to Covid-19. It’s a hard time for all the people around the world. I hope this will end soon.

Everyone is working from home and I have to make lots of food. 😊 This gravy is perfect for my hubby as he doesn’t like lots of masala in his food. And it turned out to be a perfect curry for his taste buds.

You will need
·      ½ kg chicken
·      1 tbsp ginger garlic paste
·      ½ tsp turmeric powder
·      ½ tsp pepper powder
·      ½ tsp chili powder
·      ½ lime juice
·      2 large onions chopped
·      2 green chilies crushed
·      Bunch of fresh coriander
·      Salt to taste
·      3 tbsp of oil
·      ½ cup water or chicken broth

Instructions
1.    Put the chicken, ginger garlic paste, turmeric, pepper and chili powder and lime juice in a bowl, mix well and keep the chicken aside for at least for 30 minutes. The longer you marinate the better.
2.    Heat the oil in a pan and add the onions and green chilies and fry till onions are nice golden brown. Now add the chicken and fry for few more minutes till the chicken turns its color.
3.    Now add the water or chicken broth, cover and cook till chicken is done. And make the gravy thick to your desire.
4.    When it's done garnish with coriander leaves. And serve hot.
