Sri Lankan style Brinjal salad




We have been eating home food continuously for the first time in history. Generally, we go out on Friday or Saturday nights. Now it's been a long time since lockdown. 
I'm personally finding it difficult to stay home for such long time. 🙁

Today I have made a brinjal salad as I didn’t know what to do with the brinjals I had in the fridge. This takes a little bit of time but at the end its worth the taste.  My kids loved this too.




You will need
·       
     250 gm of brinjal (I have used the small round light purple once. You can also use the big once)
·       ½ tsp turmeric powder
·       1 large onion chopped
·       1 medium size tomato cut into cubes
·       2 green chilies chopped into small pieces
·       ½ tsp pepper powder
·       3 tbsp of lime juice
·       Salt to taste
·       2 tsp of chili flakes
·       Oil for frying

1   1.  You can cut the brinjals into long strips, place them in a bowl and season with turmeric and set aside.
    2.    Now heat the oil for deep frying n keep it in medium flame.  you have to be careful how you fry the brinjals as we don’t want it to be over fried or dark brown. It should be nice golden color.
   3.    Layer a bowl with paper towels and once brinjals fried transfer them to it to absorb excess oil.
   4.    Once all done mix the brinjals with the onions, tomato, green chili and combine them well.
   5.    Then add the pepper powder, chili flakes, lemon juice and salt. Combine them well add adjust lime and salt according to taste.

Once you make the salad it has to be served immediately in order for it to taste fresh. If you're going to serve late then keep the fried brinjals separately and only when you are ready to serve mix all the other ingredients.
